Mushrooms in Ghana: They Heard, ' Where Mushrooms Grow in Africa, There Is No More Hunger' and Volunteered for Farmer-to-Farmer Program

Shiitake mushroom farmers Sandra and Doug Williams of Lost Creek Mushroom Farm travel to Ghana, West Africa, to work with oyster mushroom growers. The Williams' meet Bernard Bempah, director of Bemcom Youth Enterprises/Association (BYEA), who trains over 500 oyster mushroom farmers a year. Because of problems with the oyster mushrooms, Bempah intends to introduce shiitakes to Ghanian farmers and to the protein-hungry Ghanian diet. Doug and Sandra (pronounced Sondra) Williams of Lost Creek Mushroom Farm (www. shiitakemushroomlog. com), went to Africa as mushroom experts. Growing shiitake mushrooms on logs since the mid-1980s, and then producing grow-your-own mushroom log kits, shiitakes have taken them from farmers' markets to the Farmer-to-Farmer volunteer program, where their fungus savvy is helping people grow oyster mushrooms, shiitakes, reishi and straw mushrooms in Ghana, West Africa.

The Williams', both in their 60s, had two assignments, one at Jerusalem Farms, located close to Cape Coast, and the other with an alternative agricultural training center, Bemcom Youth Enterprises Association (BYEA) in Techiman, where they built an ongoing relationship with Bernard Bempah, the founder and Director of BYEA. They want to bring Bempah to the US to study commercial shiitake production.

Bempah intends to introduce shiitake log production to Ghanian mushroom farmers and shiitake mushrooms to the Ghanian diet. He said in an e-mail last week to Lost Creek Mushroom Farm, "If we can get support for my trip, it will change the mushroom industry in Ghana."

Bempah, who has had extensive training in oyster mushrooms and basic training in shiitakes, teaches oyster mushroom production to over 500 farmers a year, primarily women. Oyster mushrooms contain 10-30 percent protein, but they are more expensive to grow than shiitakes and have a shelf life of only 3-5 days compared with two weeks for shiitakes. The oyster mushroom process is more susceptible to contamination and many of the 5,000-7,000 growers throughout Ghana are unable to meet the demand.

Doug Williams says, ''In the last ten years Bernard has created a successful program with very limited resources and he's won national recognition for his commitment to training. The women's farms have been especially successful. I'd heard that oyster mushrooms could end malnutrition and hunger in Africa. But it's not turning out that way because of problems with oyster mushroom production. If farmers raised oysters and shiitakes together, it really could happen in Ghana.''

''We're asking for help from people who can contribute money and air miles,'' Sandra adds. A portion of Lost Creek Mushroom Farm's holiday gift log sales will go to support the project.

Help for Mushrooms in Ghana has already come from Frank Michael of The MushroomPeople at The Farm in Summertown, Tennessee. ''I sent e-mails from Ghana asking growers and suppliers for sources of warm-weather spawn to start Bempah's shiitake operation,'' she says. 'Frank donated it! Another Farmer-to-Farmer volunteer carried it to Ghana.'

Shiitake mushrooms (http://www. shiitakemushroomlog. com/facts&nutrition. html) are high in protein (second only to meat by volume), low in fat, contain all the essential amino acids and have significant health benefits. The mushrooms can improve general health because they strengthen the immune system and contain anti-viral compounds.

According to shiitake researcher Mark Phillips, "In Japan, a combination of shiitake and reishi mushroom concentrates is the official first line of treatment for cancer and AIDS. Shiitake consumption is high, and Japan has the lowest cancer rate and the highest cancer cure rate in the world.''

It takes a while for the idea of mushroom farming to catch on. ''At first, people pictured us in caves on our hands and knees, picking mushrooms from trays of composted manure,'' says Doug, a stone mason by trade, an artist by education, and an avid mushroom hunter. ''But shiitakes grow on oak logs under shade cloth, outside in shade, or indoors. Bernard is looking at teak. It's plentiful in Ghana and can resist the termites that took his first stand of logs.''

According to Sandra, ''The whole process is organic and ecologically sound. The logs are small-diameter timber that would otherwise be burned or used for low-grade construction materials.'' An Artist in Residence with a PhD in theatre, she has also has a technical writing business. She helped Bempah develop a BYEA business plan and identify marketing strategies.

There is a need not just for mushrooms, but for value-added products as well, meaning the mushrooms have at least one step of processing beyond the raw food. Sandra taught the farmers about drying mushrooms and told growers in Ghana about their experience with value-added products.

''We went from growing shiitakes for local restaurants and food stores to marketing shiitake mushroom log kits. 15 years ago Oklahoma just wasn't ready for exotic mushrooms, so we took that creative leap and started selling log kits on the Internet,'' Sandra says. ''That has made all the difference between bringing shiitakes only to Oklahomans and connecting with people all over the world through our mushrooms.''

Their presence on the web brought Lost Creek Mushroom Farm to the attention of OICI, Opportunities Industrialization Centers International. Its mission is to improve the lives of disadvantaged people through training and sustainable organizational development.

''OICI had been looking for small-scale, alternative agricultural entrepreneurs," Sandra says. 'Volunteeering to share our knowledge was something we'd been wanting to do.'

Louisiana’s First DNP Program Kicks Off Classes at Loyola University New Orleans

Members of the inaugural class of the new online Doctor of Nursing Practice program made their way to the Big Easy to familiarize themselves with the school and program professors.

The first flight of students enrolled in Louisiana’s only Doctor of Nursing Practice program arrived at Loyola University New Orleans School of Nursing on May 11.

The students attended their first classes in person, became familiar with the university’s systems and met the nationally-regarded integrated behavioral health consultant, Neftali Serrano, Psy. D. Onsite classes also included Ethics and Social Justice, led by Loyola President Kevin Wm. Wildes, S. J., Ph. D., and Philosophy of Science, taught by Cynthia Collins, Ph. D.

This inaugural group of 24, all of whom are women, represent diverse backgrounds:
71 percent represent minority or Hispanic heritage. 58 percent reside in Louisiana. The remaining students are from six other states. 92 percent indicate they intend to practice in underserved areas upon graduation. 50 percent indicated they would like to work as faculty members in a school of nursing. 90 percent or more will receive nurse traineeship scholarships to partially support tuition expenses.

School of Nursing Director Ann Cary Ph. D., M. P.H., R. N., A-CCC, said she is impressed with the class’ credentials and promise to the nursing profession.

“We have selected an outstanding cohort of practitioners seeking to obtain their DNP,” Cary said. “They have demonstrated a lifelong commitment to health care for the underserved, a passion to redesign systems of care and enthusiasm to bring new knowledge from the ‘bench to the bedside and to organizational effectiveness’ in their communities. We eagerly await their arrival and look forward to engaging the next generation of doctoral students in their leadership journey.”

The Loyola Doctor of Nursing Practice Program admits those who hold a master’s degree as a nurse practitioner with a focus in family/adult, women’s health, pediatric or gerontology. The program, accredited by the Southern Association of Colleges and Schools, will be delivered exclusively online. Within five years, Cary expects the program to grow to 125 students.

Independent studies confirm at least 15 asbestos-related cancer deaths among New York State talc workers, according to attorney who filed the mesothelioma lawsuit.

"It's a statistical improbability for the rare asbestos-related cancer to occur in a town of less than 400 persons," according to attorney Robert I. Komitor, Esq., a partner in Levy Phillips & Konigsberg, LLP.

Donald Lozo, who died in August 2005, at 67, was exposed to asbestos from talc, as was his
Late sister, Catherine, and late mother, Mary, who also died of asbestos-related cancer (http://www. lpklaw. com/showarticle. php? aid=100). Donald Lozo worked for more than a decade at the Carbola Talc Mine, Natural Bridge, according to Court documents filed by his New York mesothelioma attorneys.

The Lozo mesothelioma lawsuit (http://www. lpklaw. com/showarticle. php? aid=100) was filed today in New York State Supreme Court, Fifth Judicial District, Onondaga County, Syracuse, the Court in which the region's asbestos litigation is consolidated, according to Levy Phillips & Konigsberg, LLP, New Jersey and New York mesothelioma attorneys with extensive experience handling asbestos exposure cases.

Mesothelioma is an extremely rare disease without hereditary basis, occurring in approximately only 1 out of 100,000 persons, even less frequently in women. Natural Bridge had a population of approximately 392 persons according to the 2000 Census and zero mesothelioma deaths would be expected. Yet, In the Lozo family there now have been three deaths from asbestos-related cancer. Additionally, published studies have independently confirmed a total of at least 15 mesothelioma deaths among talc workers in New York State, Lozo's mesothelioma attorney said.

The Lozo family's mesothelioma tragedy allegedly began in the 1930s when Alfred Lozo, husband of Mary and father of Donald and Catherine, began working at the Carbola Mine. For decades Albert Lozo would return from work at the mine with talc dust on his clothing and in the family car. Mary, Donald and Catherine were constantly exposed to this asbestos-laden talc dust, which also made its way into the Lozo residence when it was released from the talc operation into the air, according to Patrick J. Timmins, Esq., another one of the New York mesothelioma attorneys (http://www. lpklaw. com/showarticle. php? aid=100) working on the Lozo's case.

"Talc mine workers had no reason to think that the mineral was dangerous. Catherine Lozo Gerber, who filed her own lawsuit after she developed mesothelioma, testified before her death in a deposition that her father sometimes took her to work - not knowing that he was exposing his daughter to cancer-causing dust," Timmins said. Donald Lozo, whose estate filed its case today, also was allegedly exposed to contaminated talc when he worked in the mill at Carbola Mine in the 1950s and early 1960s. He also was allegedly exposed to asbestos used in industrial products while working as a member of Iron Workers Union, Local 60 beginning in the mid 1960s. The Carbola Chemical Company is one of the entities believed to be responsible for mining and milling operations during the years in which Alfred and Donald Lozo worked at the Natural Bridge facility, Timmins said.

Lisa Gerber, Catherine Lozo Gerber's daughter, is executrix for Donald Lozo's and Catherine Lozo Gerber's estates, according to court documents filed by the New York mesothelioma attorneys.

For years scientists have noted the high rates of asbestos-related cancer (http://www. lpklaw. com/showarticle. php? aid=100) in New York State talc mining counties. One 2002 study published by the British Occupational Hygiene Society found Jefferson County, in which Natural Bridge is located, with the second highest mesothelioma death rate for females in the U. S. and the sixth highest for males, according to Komitor.

Independent scientists and the National Institute of Occupational Safety and Health ("NIOSH") analyzed New York State talc in the 1970s and concluded that it was contaminated with asbestos. More recently, the New York State Department of Health again confirmed the presence of asbestos in the talc ore, Komitor said.

"This is a tragedy for the Lozo and Gerber families and for the Natural Bridge community. We know there are others who've lost loved ones because of asbestos from talc and from other sources and we are doing everything we can to obtain justice for Don, Catherine and their families," Timmins said.

Named defendants in Complaint seeking compensatory and punitive damages to the full extent permitted under the law include publicly and privately held entities in the talc and asbestos industries. Under Court rules, after the defendants are served the Hon. James W. McCarthy will establish a schedule for the mesothelioma lawsuit (http://www. lpklaw. com/showarticle. php? aid=100), to include dates for exchanging evidence, motions, and, the trial, Timmins said.

Projects and social entrepreneurs receiving funding from this inaugural round of World Connect Grants include:

Women of Volcan Greenhouse & Nursery, Volcan, Costa Rica
Local women’s group to construct a greenhouse and nursery for fruit, vegetables, medicinal & ornamental plants. Project is designed to improve nutrition in a vitamin-deficient community and generate income for the women’s group.

Rural Maternity Improvements in Kati, Mali
Rural community health center to install solar panels and running water to improve conditions for labor and delivery. This project will make the maternity ward of the health center more inviting and improve access to healthcare services for mothers and their newborns.

World Connect Honors Community Leader

Kenia Feliz is an example of a changemaker who has been funded by World Connect and has made a meaningful difference in the health and well-being of women and children in her community.

Many clients have recently asked Dr. Brandemihl how they can achieve their New Year's resolution of improving their mental health in 2009. With the stress of a struggling economy and growing demands from their jobs and families it can be quite difficult. "There are several things you can do on a daily basis to find that balance, but self awareness and prioritizing are key," said Dr Brandemihl. "It's important to learn to recognize your stressful feelings and emotions, so you can quickly find effective ways of dealing with and preventing them."

Dr. Brandemihl said that, "Stress may often trigger anxiety. Anxious people may find themselves worrying excessively, not sleeping well, and feeling tense, on edge, distractible and irritable. Life stressors may also lead to symptoms of depression including sadness, crying spells, and lack of pleasure in life. Depression can sometimes trigger sleep and appetite disturbances as well as feelings of hopelessness, worthlessness or even suicidal thoughts."

"There are several things you can do proactively to prevent depression and anxiety from developing or worsening," said Dr Brandemihl. "Some techniques are very easy to implement."

1. Maintain a regular sleep schedule. Go to bed at the same time and wake up at the same time. Avoid naps longer than thirty minutes as they may disrupt your nighttime sleep.

2. Eat a healthy, balanced diet and get thirty minutes of cardiovascular exercise three times a week through something as simple as walking. The malls can be a good place to walk on cold, winter days.

3. Journal or blog to have an outlet for your feelings or emotions. You can even throw the paper away when you're done writing if you are a private person. The important aspect is having an outlet for the feelings.

4. If you are unemployed (or even if you are not) find somewhere to volunteer between interviews and searching. This helps your self esteem and also helps to maintain some structure and purpose in your life.

5. Participate in religious or spiritual practices, preferably with others, to foster a sense of fellowship and hope.

6. Communicate to your family and friends that you are feeling "sad", "stressed" or "anxious" so they can reach out a helping hand. If family or friends are not around consider a support group either online or in person.

7. Refrain from drug and alcohol use as this can exacerbate or cause depression and anxiety. Also avoid excessive amounts of caffeine as it can contribute to anxiety.

8. Find a new hobby or interest that involves socialization to help foster new relationships.

On Friday, September 23, NBC kicked off its new series "Three Wishes" by helping an 11-year old girl, Abby Castleberry, recover from a life threatening car accident. Once a healthy, athletic child, a car accident changed AbbyÂ’s life. When NBC asked what her wishes were, she said to help her parents pay for her medical expenses and to return to competitive athletics.
